Sauerkraut and Bloating

This question comes up constantly and gets answered badly in both directions — by people promising ferments will fix it, and by people warning they will cause it.

What is reasonable to say: cabbage is a vegetable some people find hard going regardless of fermentation, and any fermented food introduces something new to a digestive system that has its own habits. A large serving on day one is a big change. That is why the traditional serving is a forkful with a meal rather than a bowl.

If you want to try it, the sensible approach is the boring one. Start with a tablespoon. Keep it steady for a week or two before increasing. Eat it with food rather than alone. Notice what actually happens for you, over weeks, rather than judging it on one sitting.

Beet & Carrot is our mildest jar and the gentlest starting point; it is less salty and less sharp than the classic.

What we are not going to do is tell you what sauerkraut will do for your digestion. That varies by person in ways no shop can predict, and persistent bloating is a reason to talk to a doctor rather than to adjust your cabbage intake.
